Enchilada Festival Underway at Mestizo

Mestizo is one of our favorite restaurants for dinner, because of the sensational Mexican meals it offers, emerging from the roots of regional cuisine and brought up to date in the subtlety of the gourmet cuisine. Chef Karla Morales distinguishes herself for cultivating delicate flavors from select ingredients that bring Mexican cuisine up to new levels. In her hands, tradition becomes delicacy.
In the beautiful setting of the restaurant, a model of a Puerto Vallarta downtown home probably dating from the early 20th century, as we sipped our aperitifs on the terrace, we went over the tempting choices proposed by the enchilada festival menu.
Letty, being the salad lover she is, in accordance with the healthy nutrition spirit she cultivates, leaned towards the Summer Salad,
a baby greens mix with strawberries, goat cheese, nuts and mango chile vinaigrette, which she found delicious. I, in turn, chose my favorite soup, the Creole Seafood Soup, an exotic combination of scallops, octopus, fish and shrimp au flambé served with mescal and a touch of Poblano pepper custard. It is simply fantastic.
As we made our way into the core of the festival, it was difficult to make a decision, all choices looked so enticing. Letty was about to surrender and ask Karla for a suggestion, but I insisted that she should make a decision and she finally chose the shrimp enchilada with black bean sauce. She was so pleasantly surprised by the unusual, delicious combination of flavors, an excellent proposal from the chef.
In spite of being tempted by the Squash blossom enchilada with a hint of epazote and Poblano pepper custard, I decided to try the seafood enchilada with a creamy chipotle sauce. Such a delicate flavor of the creamy sauce! Add the precise amount of gratin cheese, which does not impose either flavor or texture, but instead blends in perfectly with every exquisite mouthful, and it sometimes takes you away into the realms of crêpes. To enhance the pleasure of tasting, I took the Maitre d’s suggestion of a Chilean Los Vascos Chardonnay.
Good conversation and great dessert, corn flan for me and coconut ice cream for Letty, along with a cup of coffee, is the perfect way to end an unmatchable dining experience, which is not to be missed.
