Prego, the Return of a Tradition


We rediscovered a restaurant that is making a comeback into the gastronomic scene of Puerto Vallarta, after being away for longer than a decade.

Monday night we had dinner at Ristorante Prego, located in the Villas Vallarta Shopping Center; besides enjoying a delicious Italian dinner, we rediscovered a restaurant that is making a comeback into the gastronomic scene of Puerto Vallarta, after being away for longer than a decade.
This return is staged within the framework of a story of dreams come true and reunions that have taken place over the last few months, since Martha Imelda Tristan Espino began caressing the possibility of reopening the restaurant in its original location of the Villas Vallarta Shopping Center.
mahi mahiMartha Imelda was the manager of the Ristorante Prego in its first epoch; however, she quit to become a full time mother of three. Today, two of her children are professionals, and her youngest attends university.
Last year, as she heard the news that the locale was vacant, she contacted the owner and negotiated a lease. Shortly after, she run into Chef Alipio Martinez Padilla, the original chef at Prego. He immediately accepted to work for her. While the remodeling and conditioning of the locale was underway, members of the original staff knocked at the door, they were excited to learn that the restaurant was reopening and wanted to join in the project.
outsideCurrently, the restaurant sports almost the same original staff, and this way it is reviving an old gastronomic Puerto Vallarta tradition.
The menu, designed with the national Italian colors as an Italian form notebook, includes a variety of dishes such as short and long pasta, pizzas and specialties.
The night we dined there we enjoyed sharing a Caesar Salad, which is served for two; and at main courses, I couldn’t help falling for the House lasagna, which I paired to a Mexican Casa Madero Cabernet-Merlot. Letty, in turn, ordered the Mahi Mahi with butter sautéed shrimp, white wine and lemon. She found it delicious.
Our gastronomic experience ended with cappuccino for her and regular black coffee for me.
The restaurant enjoys live music by Colombian guitarist-singer Alvaro Gaviria Perez from 7:00 p.m.
The restaurant walls display paintings by local artist Jorge Lopez, who paints using only his fingers.
This new beginning is full of projects to carry out, and ideas to materialize. There is no doubt that we will hear from Prego soon, as Martha and her staff reach their goals and turn them into continuous success.
Prego is open for breakfast, lunch and dinner from 8 a.m. to 11 p.m.
