Prego, More than Just Cucina Italiana
The restaurant’s menu is being revised to the end of expanding it to include other emblematic dishes from the Italian Cucina

Prego is continuously gaining relevance in the life and gastronomy of Puerto Vallarta. Four months on, it is teeming with activity. It is reaching far beyond gastronomy and expanding into art and culture. It has held three art shows and it is becoming a focal point for community groups.
Last Monday we dined there and had the opportunity to talk with restaurant owner Martha Tristan, who told us about the many projects currently being developed and which we will se come about soon, like a concert series in the bandstand inside the Villa Vallarta Shopping Center, just to mention one.
The restaurant’s menu is also being revised to the end of expanding it to include other emblematic dishes from the Italian Cucina, like eggplant dishes or Quattro fromaggi pizza.
Prego also affirms its commitment to personalized service. “We have all the ingredients” said Martha, “and we are happy to take requests from our clients”. The cream of the day illustrates this perfectly. It is prepared at the moment, in individual portions. “If a client has a craving for a specific cream that day, we’ll prepare it with all fresh, natural ingredients. The same goes for vegetarian or health conscious customers. At breakfast, we are including a special menu we are calling Naturissimo,” an enthusiastic Martha said.
After pleasant conversation, which ended because Martha was required by clients, we went over the menu, full of tempting delights, some of which we had had to put off last time. Letty had a craving, so she ordered Mahi Mahi filet, served with sautéed shrimp, white wine lemon sauce, vegetables and pasta. Se loves that dish ever since she tried it for the first time.
I, in turn, had a particularly big appetite that evening, so I had an Ajillo shrimp appetizer, and mushroom cream. They were both very good. At main courses, I had a traditional Calzone. I ordered the marinero, which comes with shrimp, octopus, sea scallops and cheese. A great dish! Simple, robust, rich, ideal for a big eater like myself.
To complete my dining experience at Prego, I was treated to a Prego special coffee, with Baileys and Grand Marniere. It was perfect!
I know I have many dinners at Prego ahead of me before I can try the whole menu, but what a delightful task!
